Abstract

Pancit Habhab is known to be the one of the jewels of the municipality of Lucban Quezon. It has shaped the tourism industry of Lucan together with the attractions it offers to tourists who are coming from domestic and international places. This study underscored on the analysis of the three-decade cultural significance and influence of the modernization of Pancit Habhab to the tourism industry of Lucban, Quezon. It measured the significant difference on the changes of the way this delicacy was prepared, cooked, and marketed throughout the past 30 years. This research used a qualitative approach with the help of interview guide questions. Its focus was on the creation of open-ended questions to further evaluate and appraise a clearer picture the way this dish was perceived by different chefs in various years of presenting the dish to different tourists. It revealed that each decade has its own unique way of cooking the dish. As modernization and technological advancement evolved, Lucbanins have been more innovative and creative when it comes to cooking Pancit Habhab, adding a twist or style through the use of extra ingredients. Moreover, the study underlined that this dish is relevant and important to every decade in promoting the place for potential tourists. A histogram was created to further differentiate and show the changes that had happened towards Pancit Habhab in the last three decades. As recommended, chefs and key informants of Lucban, Quezon should balance the influence of modernization by strengthening the authentic recipy of Pancit Habhab.
